Namaste, gourmets! Today we will tell you about a very interesting and complex dish of Indian cuisine – chicken Jalfrezi or chicken jalfrezi. Jalfrezi is not the name of the one who invented this dish, but it is a way of cooking! Chicken Jalfrezi is a thick tomato—based curry made from boneless chicken pieces, bell peppers and onions. The dish also includes a lot of spices, which makes its preparation more difficult than just frying chicken in a frying pan and, of course, it tastes amazing.
Translated from Indian, “jal” means spicy, and “frezi” means roast. Legend has it that during the colonization of India by the British, these same Britons added meat to curry. Curry is a British word, not an Indian one, and means “a set of spices.” This curry turns out not to be liquid, as is commonly thought, but thick, enveloping meat and vegetables, as ideal as gravy for a side dish, which is often boiled basmati rice.
Indian Chicken Jalfrezi
Ingredients
• Chicken thigh
• Onion
• Garlic
• Bell pepper
• Tomatoes
• Fresh ginger
• Hot pepper
• Olive oil
• Cumin
• Coriander
• Paprika
• Turmeric
• Hot pepper (powder)
• Garam masala
• Ground black pepper
• Sea salt
• Tomato paste
• Soy sauce
• Ketchup
• Rice vinegar
• Lime juice
Chicken with rice in Indian style
Chicken thighs are divided into small pieces.
Peel the onion and garlic and finely chop them.
Cut the bell pepper into small pieces.
Grind the tomatoes on a fine grater, discard the peel.
Peel and finely grate the ginger.
Chili pepper is cut into thin pieces at an angle.
Heat the olive oil over medium heat in a large frying pan.
Add cumin seeds and onions to the oil. Fry for a short time.
Add garlic and chicken pieces. Fry for a short time.
Add ground coriander, paprika, turmeric, hot pepper (powder), garam masala, ground black pepper, salt. Mix it up.
Add the grated tomatoes and tomato paste.
Add pieces of bell pepper, chili pepper, soy sauce, ketchup, rice vinegar. Stir and cook for no more than 5 minutes.
Remove from the heat and pour over the lime juice.
Serving: chicken Jalfrezi is ready. Serve it with boiled rice, sprinkled with coriander leaves.
