Ingredients:

Salmon — 450 grams
Parsley leaves — 1 tablespoon
Red onion — ½ onion
Capers — 2 tablespoons
Lemon zest — ½ lemon
Lemon juice — 1 lemon
Chicken egg — 1 piece
Salt — ½ teaspoon
Ground black pepper — ¼ teaspoon
Dijon mustard — 2+1 tablespoons
Panko breadcrumbs — 100 grams
Green onion — 2 tablespoons
Horseradish — 1 tablespoon
Sour cream 20-25% — 3 tablespoons
Greek yogurt — 3 tablespoons
Tomato — 1 piece
Red onion rings to taste
Romano salad or Frisse is not enough
Burger buns — 4 pieces

Directions:

1. ½ onion, finely chop capers.
2. Chop the parsley leaves and salmon coarsely.
3. In a deep bowl, mix the chicken egg, juice of half a lemon, lemon zest, capers, salt, ground black pepper, 2 tablespoons Dijon mustard.
4. Chop the onion and parsley leaves in a blender for about 20 seconds.
5. Add the parsley and onion to the bowl.
6. Grind the salmon pieces several times in a blender. The texture should not turn out to be porridge.
7. Add the salmon to the bowl with the remaining ingredients.
8. Add Panko breadcrumbs to the bowl. Mix it up.
9. Divide the mixture into 4 parts.
10. Form cutlets from the mixture and send them to the refrigerator for 30 minutes.
11. Finely chop the green onion.
12. Sauce: mix sour cream, yogurt, green onion, juice of half a lemon, one tablespoon of Dijon mustard, horseradish, ground black pepper to taste.
13. Fry salmon cutlets over medium-low heat. 4 minutes (may take longer) on each side.
14. Fry the inside of the burger buns.
15. Assemble the burger: grease the bottom of the bun with lemon sauce, put the cutlet, slices of tomato, onion rings, lettuce Romano or Frisse, cover the top of the bun.
Serving: Serve the burger immediately with your favorite drinks.
