Saute vegetable recipe
Ingredients:
Eggplant — 2 pieces
Onion — 1 piece
Cherry tomatoes — 10 pieces
Green onion feathers — 2 pieces
Parsley — 1 bunch
Bell pepper — 1 piece
Mushrooms — 300 grams
Garlic — 2 cloves
Vegetable oil — for frying
Directions:
1. Cut the eggplant into small pieces.
2. Sprinkle the eggplant with salt. Leave on for 20 minutes. So they will not be bitter. After 20 minutes rinse with cold water.
3. Cut the cherry tomatoes into halves.
4. Onions and garlic finely chopped.
5. Mushrooms cut into 4 parts.
6. Bulgarian pepper cut into pieces the size of cherry tomatoes.
7. Heat vegetable oil in a frying pan.
8. Fry the eggplant until tender. When ready put on plate.
9. Add oil and fry the mushrooms until tender. When ready put the mushrooms on a plate (with eggplant).
10. In a heated pan pour oil, add cherry tomatoes, garlic, onions and bell pepper. Fry until tender.
11. Add eggplants and mushrooms to the vegetables in the pan. Cook for another 7-10 minutes.
Serving:
Put on a plate and add the chopped green onions and parsley.
