Tebasaki Chicken Wings

Konnichiwa, gourmets! The Japanese love to cook chicken dishes and that’s why today the recipe is for Tebasaki or fried chicken wings.

What is Tebasaki

Do not confuse Tebasaki, Teriyaki and Karaage! Many people confuse these varieties and concepts. So what is the difference between Tebasaki, Teriyaki and Karaage?! Tebasaki is fried chicken wings in Tebasaki sauce. The composition of the Tebasaki sauce is soy sauce, rice sweet wine Mirin, sugar, garlic and ginger. Teriyaki is also a sauce made from soy sauce, rice wine Mirin and sake, cook it for 20 minutes. But Karaage is a way of cooking double-fried chicken pieces at different oil temperatures.

How to make Tebasaki sauce

In a saucepan or frying pan, mix soy sauce, Mirin rice wine, sugar, garlic, grated ginger and its juice. Bring the sauce to a boil and let it cool. Add rice vinegar to the sauce.

How to cook chicken wings in Japanese

Chicken wings are rolled in corn starch. Fry in boiling oil (saucepan or deep fryer). Cover fried chicken wings with Tebasaki sauce. Usually served with cold light beer.

Tebasaki Chicken Wings

Ingredients:

Chicken wings — 800 grams
Salt — 5 grams
Pepper — 3 grams
Ginger — 15 grams
Garlic — 1 clove
Soy sauce — 3 tablespoons
Mirin sauce — 2 tablespoons
Sugar — 2 teaspoons
Rice vinegar — ½ teaspoon
Corn starch — 50 grams
Frying oil — 1 liter

Directions:

1. Wash the chicken wings. Dry it.
2. In a large bowl, mix the chicken wings, salt and pepper.
3. Sauce: Grate ginger on a fine grater. Strain the ginger through a fine sieve. Leave the juice.
4. Garlic three on a fine grater.
5. In a frying pan, mix soy sauce, mirin, sugar, ginger juice, grated ginger. Cook on maximum heat, stirring regularly, bring to a boil. Remove from the fire.
6. Add rice vinegar to the cooled Tabasco sauce. The sauce is ready.
7. Pour cornstarch into a cup.
8. Roll chicken wings in corn starch.
9. Heat the oil in a deep fryer or deep saucepan to 180°C (356°F).
10. Fry the chicken wings in oil for 10-12 minutes.
11. Grease the fried chicken wings with Tebasaki sauce.
