Fergese Recipe
Fergese is a national Albanian casserole. A hearty and delicious dish from southeastern Europe. Traditional casserole of sweet bell peppers, tomatoes and cheese.
How to cook Fergese?
Bake the peppers in the oven. We remove the seeds and the leg. Tomatoes and onions are cut. We prepare a filling of peppers and tomatoes with the addition of fresh fragrant basil.
Mix the butter and flour. Add the cheese and melt the mixture.
Fill the filling with the mixture and cook in the oven for 25-30 minutes.

Ingredients:
Red sweet Bulgarian pepper — 400 grams
White or yellow onion — 50 grams
Tomatoes — 200 grams
Feta cheese — 200 grams
Olive oil for frying
Fresh basil — 1 teaspoon
Salt to taste
Butter — 2 tablespoons
Universal flour — 2 tablespoons
Greek yogurt — 3 tablespoons
Directions:
1. Prepare a large baking tray.
2. Take olive oil and wipe each Bulgarian pepper.
3. Put the pepper on a baking sheet and send it to the oven at 392 ° F (200 ° C). Turn each pepper every 20 minutes. The total cooking time is 1 hour.
4. The onion chop finely, while the peppers are cooking.
5. The tomatoes cut into pieces of 1 inch (2-3 cm).
6. The basil leaves chop finely.
7. Feta cheese cut into cubes of 1 inch (2-3 cm).
8. Ready-made Bulgarian peppers are pulled out of the oven.
9. Remove the leg from the pepper, cut, remove the seeds.
10. Heat the oil in a frying pan on maximum heat.
11. Add the onion to the pan. Fry for 5 minutes. Put it aside.
12. Reduce the heat to medium.
13. Add chopped tomatoes, bell peppers, basil to the pan. Cook for 5 minutes.
14. Salt to taste. Cook for another 5 minutes.
15. Remove from heat. Mix with fried onions.
16. We put it in a baking dish.
17. Melt the butter separately in a saucepan over medium heat.
18. When the butter is completely melted, add flour. Stir until a homogeneous mass is formed.
19. Add cubes of Feta cheese to the mixture. Stir until the cheese melts and mixes with the mixture. A homogeneous mass should be obtained.
20. Remove the saucepan with the mixture from the fire.
21. Add Greek yogurt. Mix thoroughly.
22. Add the mixture on top of the pepper and tomato filling to the baking dish.
23. Put the dish in the oven at 340 °F (170 ° C) for 25-30 minutes.
Serving: Serve the dish hot.
