Ingredients:

Rice — 150 Grams
Chorizo — 50 grams
Shrimp-10-15 Pieces
Squid — 120 Grams
Mussels — 10 Pieces
Bell pepper — 1 Piece
Green young peas — 50 grams
Water — 0.5 liters
Garlic — 3 Cloves
Parsley — 0.5 Beam, to taste
Saffron — 1 Pinch
White onion or shallot — 1 piece
Turmeric — 1 teaspoon
Lime or lemon — 1/2 Pieces
Olive oil — 50 Milliliters
Salt and ground black pepper — to taste
Dry white wine — 150 milliliters

Directions:

1. First of all, prepare seafood: squid, shrimp and mussels.
2. We clean the squid from the transparent film, so that it would not be so hard in the end.
3. In a saucepan, pour the water. Boil. And cook the squid no more than 2 minutes! Remove from the pan, set aside and allow to cool slightly.
4. Squid cut into rings.
5. Cook shrimp with shells and heads.
6. We clean the heads and shells of shrimps, but do not throw them away! Do not forget to remove the inside of the shrimp.
7. Preheat the pan over high heat. Add 1-2 teaspoons of olive oil for frying.
8. In hot oil, add the heads and shells of shrimp.
9. Add a pinch of saffron to the pan and pour 0.5 liters of water, so that the heads and shells are completely covered with water. Cover and cook for 10 minutes.
10. The resulting broth is filtered through a fine colander.
11. Chorizo cut into thin slices.
12. Finely chop the Onion and pour cold water for 5 minutes, so the onion will not be bitter.
13. Garlic finely chop.
14. Bulgarian pepper cut into rings. Do not forget to remove the core and seeds first.
15.Heat the olive oil in a frying pan over high heat.
16. Fry the chorizo to a crisp.
17. Add the onion and garlic to the chorizo. Stir. Cook for 2-3 minutes.
18. Add a teaspoon of turmeric.
19. Add salt and pepper.
20. Put the rice in the pan.
21. Pour the previously prepared shrimp broth.
22. Add the shrimp, peas, bell pepper, and a glass of wine.
23. Squeeze the juice of half a lime or lemon. Mix thoroughly.
24. Cover with a lid. Turn down the fire. And cook until the rice is ready for 20-30 minutes.
Serve the dish hot!
