Ingredients:

Short-grained white rice — 200 grams
Fresh salmon — 300 grams of fillet
Soy sauce — 50 ml
Rice vinegar — 1 ½ tbsp
Rice white sweet wine or Mirin — 120 ml
Lime juice — ½ a lime
Sugar — ½ tbsp
Sesame oil — 1 tsp
Coriander — 5-7 sprigs
Cucumber — 1 piece
Radish — 5-6 pieces or Daikon 1 piece
Avocado — 1 piece
Dry seaweed Nori-10 grams
Sesame seeds — 10 grams
Cherry tomatoes — 4-6 pieces

Directions:

1. Wash the salmon and remove all the bones. Cut into 2 cm cubes.
2. Mix soy sauce, rice vinegar, sesame oil, sugar, rice wine, coriander (finely chopped) and lime juice. Mix thoroughly. Set aside.
3. Cut avocado, radish, cucumber into slices.
4. Cherry tomatoes cut into quarters.
5. Wash the rice well, 5 or 7 times, so that there is no starch left. Cooking until ready.
6. While the rice is cooking, put the salmon in the sauce.
7. Wash the finished rice and put it in a deep dish.
8. Put the rest of the ingredients on top of the rice.
Serve the dish with fried sesame seeds and sliced strips of Nori seaweed.
