Roasted Mushrooms with Eggs Recipe

Roasted Mushrooms with Eggs (Pražene gobe z jajci) is the national dish of Slovenia. In the region of Shtaersk, where mushroom picking is a common and popular activity, therefore baked mushrooms with eggs and fresh parsley are a favorite dish in the region, served as a hot appetizer or an independent dish.

To prepare it, the mushrooms need to be cleaned and cut into thin slices, then fried with onions. Then chopped parsley, pepper and crushed garlic are added to the pan before adding beaten eggs. The mixture is seasoned with salt and mixed until the eggs are fully cooked.

It is recommended to serve the dish with moderately strong or slightly spicy dry or semi-dry wines.

Garlic — 2 cloves
Onion — 1 piece
Champignons — 200 grams
Parsley — bunch
Frying oil
Chicken egg — 4-6 pieces
Salt and pepper to taste


1. Finely chop garlic, onion and parsley.
2. Cut the mushrooms lengthwise in slices.
3. Break the eggs into a bowl and mix thoroughly until smooth.
4. Heat the oil in a frying pan over high heat.
5. Add the onion and fry for 5 minutes.
6. Add the mushrooms and mix with the onion. Cook for 5 minutes. Stir regularly.
7. Add garlic and parsley. Mix it up. Cook for 5 minutes.
8. Add egg mass. Spread evenly over the entire pan. Reduce the heat to medium or less.
9. Salt and pepper.
10. Cook for 7-10 minutes. Make sure that the lower part of the dish does not burn at the bottom of the pan. You can cover it with a lid to speed up the cooking of the upper part of the dish.
Serving: Serve the dish hot.
