In any case, do not cook by pulling the beef immediately from the refrigerator! Roast beef in a frying pan is perfect if you use a large piece of beef at least 5 cm high.

Ingredients:

Beef tenderloin — 400 grams
Olive oil — 1 tablespoon
Salt and pepper to taste
Thyme — sprig
Garlic — 2 cloves

Directions:

1. We keep the meat at room temperature for at least 1 hour.
2. Wash the thyme and separate the leaves from the branch.
3. Peel and finely chop the garlic.
4. In a bowl, mix salt, pepper, thyme leaves and garlic.
5. Rub the meat with the mixture and let it stand for 10 minutes.
6. Heat the olive oil in a frying pan.
7. Put the meat in the pan. Don’t touch it! Fry for 1.5 minutes.
8. Turn the piece of meat on the opposite side. Don’t touch it! Fry in the same way for 1.5 minutes.
9. Dale for the next 8 minutes, fry the meat on each side of the piece for 1 minute.
10. Remove the meat from the fry pan on a cutting board and let rest for about 5 minutes. So all the sealed meat juice is evenly distributed inside the piece.
Serving: Cut the meat into slices and serve with fresh vegetables, Dijon mustard and lettuce.
