Tourtiere Canadian Pie

Tourtiere is a traditional Canadian pie. Pie made of layered crispy dough with potato and meat filling. The taste is whole and balanced. There are notes of garlic, oregano, saffron and thyme in this dish.

This recipe is made from ground beef, there are options with salmon, or pork, or lamb.

The pie was brought by British colonists in the middle of the 18th century. The colonists cooked it in French. Further, the recipe has undergone a number of changes, but the basis remains the same.

The name of the dish comes from the dishes in which it was cooked this dish. This dishes can now be called a flat frying pan without a handle.

Ingredients:

Potatoes — 350 grams
Ground beef — 700 grams
White or yellow onion — 200 grams
Garlic — 4 cloves
Ground cloves — ½ teaspoon
Ground nutmeg — ¼ teaspoon
Thyme — ½ teaspoon
Ground black pepper — ¼ teaspoon
Saffron — 1 teaspoon
Oregano — 1 teaspoon
Salt — ½ teaspoon
Puff pastry without yeast — 2 sheets (500 grams)

Directions:

1. Wash and peel the potatoes.
2. Cut the potatoes into cubes of 2 inches (5-6 cm).
3. Finely chop the garlic and onion.
4. Boil the potatoes until tender. Leave the water separately for further steps.
5. Grind 1/3 of the potatoes to puree. Leave the rest of the cubes.
6. Heat the frying oil in a frying pan. Maximum fire.
7. Add ground beef to the pan. Cook for 20 minutes.
8. Add spices to the minced meat: cloves, garlic, onion, nutmeg, thyme, saffron, oregano, salt and pepper. Stir and cook for another 10 minutes.
9. Add water from boiled potatoes to the pan. Reduce the heat to medium minimum. Cook for 45 minutes or until the moisture has completely evaporated.
10. Mix the minced meat with mashed potatoes.
11. Add the remaining potato cubes. Mix carefully so that the cubes remain whole.
12. Prepare the baking dish.
13. Roll out one sheet of dough to fit the size of the mold.
14. Put the filling into the mold.
15. Cover the pie with the second sheet of dough. Make slits so that excess moisture comes out during cooking. Pinch the edges to give the pie a shape.
16. Preheat the oven to 360°F (180°C).
17. Cook for 1 hour.
Serving: The pie is delicious both cold and hot. So serve as you like.
