Fabada Asturiana is a thick soup of Asturian cuisine, the northern region of Spain. This is a thick and rich soup of white beans, chorizo and bacon. The name comes from the word “fabes” meaning “beans”. Paprika turns the soup red. It is customary to cook the soup for at least 1 ½ hours over low heat. Fabada is a comfortable winter food, as it is very high-calorie and delicious.
