What is Garaetteok / garae-tteok / garaeddeok (가래떡) ?

This dish is from Korea. I have never heard or seen such a dish before, since I do not live in Korea. But it’s always interesting how other cultures live. And now the challenge is accepted and I start cooking a cylindrical rice cake. The recipe is easy, the ingredients are simple, but the cooking approach is unique.

How to cook Korean rice cake?

It is necessary to mix rice flour with salt and water. We will get the basics for this dish. Then we send it to the steamer for 25 minutes. The dough will be ready and soft. Well, the most interesting thing: we begin to pound the dough with a wooden mortar and put it layer by layer. The dough becomes elastic and usable. We roll them into long cylinders and cut them into different pieces.

This is the basis for other dishes, such as spicy rice cake (Tteokbokki) or rice soup (Tteokguk)

Ingredients:

Rice flour — 200 grams
Salt — ½ teaspoon
Water — 9 tablespoons
Sesame oil — ½ tablespoon

Directions:

1. Mix salt and flour in a cup.
2. Add 3 tablespoons of water and mix.
3. Repeat the previous step 2 more times.
4. Knead the dough.
5. Cook the dough in a steamer for 25 minutes.
6. Pour ½ tablespoon of sesame oil on the work surface and distribute it evenly.
7. Put the dough on the work surface.
8. Crush the dough with a potato masher to a thickness of 1 inch (3 cm).
9. Put the dough cake in 3 layers. Repeat the previous step 5-7 times.
10. Divide the dough into 4 parts.
11. Roll out each of the parts into a long cylinder with a diameter of 0.5 inches (1.5 cm).
12. Cut the cylinder into smaller cylinders 4 inches (5-7 cm) long.
Serving: Add for cooking other dishes
