Total time:

Ingredients:

Chicken broth (if not, plain water) – 1 liter
Saffron – 1 teaspoon
Turmeric – a pinch
Olive oil – 1 tablespoon
Butter – 2 tablespoons
Onion – 1 piece
Rice Arborio – 200 grams
Dry white wine-150 ml
Parmesan – 50-100 grams
Salt-to taste

Directions:

1. Onion finely chop.
2. In a saucepan, melt the butter at maximum heat.
3. Reduce the heat to almost a minimum.
4. Add the chopped onion to the pan.
5. Use a spatula to constantly stir the onion. Until the onion becomes a matte white color ( does not lose transparency).
6. Add 150 ml of dry white wine to the pan.
7. Add the rice immediately after the wine.
8. With a spatula constantly stir until the wine is completely absorbed into the rice.
9. While the rice is cooking, add saffron to the chicken broth (or boiled hot water) to dissolve, so that it gives color and taste. Leave to infuse for 5-10 minutes.
10. Add chicken broth with saffron to the almost ready rice in portions of 250 grams and stir constantly. As soon as a portion of the broth is absorbed into the rice, add the next one.
11. Add a pinch of turmeric and stir the rice thoroughly. The rice should be golden in color.
12. Turn off the fire.
13. Season with salt to taste.
14. Add finely grated parmesan. Mix thoroughly.
Serve with fresh basil leaves. Serve the dish hot!
Bon Appetit!
