Konnichiwa, gourmets! The Japanese love to cook chicken dishes and that’s why today the recipe is for Tebasaki or fried chicken wings.
Do not confuse Tebasaki, Teriyaki and Karaage! Many people confuse these varieties and concepts. So what is the difference between Tebasaki, Teriyaki and Karaage?! Tebasaki is fried chicken wings in Tebasaki sauce. The composition of the Tebasaki sauce is soy sauce, rice sweet wine Mirin, sugar, garlic and ginger. Teriyaki is also a sauce made from soy sauce, rice wine Mirin and sake, cook it for 20 minutes. But Karaage is a way of cooking double-fried chicken pieces at different oil temperatures.
In a saucepan or frying pan, mix soy sauce, Mirin rice wine, sugar, garlic, grated ginger and its juice. Bring the sauce to a boil and let it cool. Add rice vinegar to the sauce.
Chicken wings are rolled in corn starch. Fry in boiling oil (saucepan or deep fryer). Cover fried chicken wings with Tebasaki sauce. Usually served with cold light beer.
