Ingredients:

Mushrooms — 10 pieces
Cilantro — a bunch
Lemongrass — a couple of pieces (50 grams)
Ginger — 20 grams
The rind of the lime — 2-3 slices
Cherry tomatoes — 6-8 pieces
Red chili pepper — 1 piece
Garlic — 2-3 cloves
Coconut milk — 200 grams
Sesame oil — 50 grams
Raw shrimp — 500 grams
Water for broth — 1 liter

Directions:

1. Cilantro leave only the leaves.
2. Slices of cut ginger.
3. Coarsely chop the lemongrass stalks.
4. Slices cut the red chili pepper.
5. Shrimp clean, remove head and shells.
6. Cook the heads and shells for 10-15 minutes in a separate pan.
7. Mushrooms are washed and cut into large slices.
8. Fry the mushrooms separately. we put it aside.
9. Garlic flatten with wide knife, that it would flatten out.
10. Heat a spoonful of olive oil in a frying pan.
11. Put the garlic, ginger, lemongrass and chili pepper in the pan.
12. Fry for 2-4 minutes and remove from the pan, leaving the oil. The oil will become saturated with the taste of the ingredients.
13. In the hot fragrant oil, put the peeled shrimp. Fry for 2-5 minutes.
14. Add the previously fried mushrooms to the shrimp. fry for 2 minutes.
15. Add the cherry tomatoes cut in half. Fry for about 5-7 minutes.
16. Add the coarsely chopped lemongrass (2-3 stems).
17. Add the shrimp broth and coconut milk. cook for 5-10 minutes.
18. Add coriander leaves.
19. Turn off the heat on the stove and let the soup brew for 10-15 minutes.
Serve hot! For sharpness, add slices of red chili pepper. When used, do not eat pepper, lemongrass!
