How to make Dressed Herring?

Dressed Herring or as they call “Herring Under a Fur Coat” is a salad of Russian cuisine. Salad is popular in the former USSR countries (Russia, Belarus, Ukraine, Kazakhstan and others). This salad is prepared in every family in winter, when there is a lot of snow outside and Christmas is on the doorstep. This is Russian comfort seasonal food.

The salad consists of several layers of vegetables and fillets of spicy herring. In the salad, a little mayonnaise is put between each layer and a tablespoon of it is distributed over the entire surface of the vegetable layer. Mayonnaise is usually used from the store, but some make homemade mayonnaise. The peculiarity of the salad is that the last layer turns pink due to the mixing of mayonnaise and boiled beet juices.

After cooking, the salad is put in the refrigerator for a couple of hours, so that the layers are soaked. The shelf life of the salad in the refrigerator is 3-4 days. But it doesn’t stay there that long 🙂

Ingredients:

Buly or yellow onion — 1 onion (150 grams)
Herring fillet — 300 grams
Potatoes — 320 grams
Carrots — 300 grams
Beetroot — 340 grams
Mayonnaise — 100 grams

Directions:

1. Cook the vegetables until tender. Peel it off.
2. Herring should be boneless. We cut it into small pieces.
3. All the vegetables are three on a fine grater.
4. Spread the salad in layers. Tamp each layer slightly, but not too much. The sequence of layers: potatoes, mayonnaise, pieces of herring, onions, mayonnaise, carrots, mayonnaise, beets, mayonnaise.
Serving: Give the salad a little rest in the refrigerator or immediately serve it on the table, garnished with slices of green onion, dill, parsley and cilantro.
